The upper-management corporate officers of Santorini Franchise Development Company have pledged to protect all franchisees and potential franchisees from furnishing them with any misleading information and to comply with all applicable laws and regulations concerning franchising. In addition, we have pledged to provide reasonable, continuous and adequate guidance and support to all of our franchisees, as well as, to work towards a resolution of possible complaints through direct negotiations with them.

Takis Vartelas - Founder, President & CEO
Takis founded Santorini Island Grill in 1999. He has an established track record as a seasoned business development professional. His education includes a Bachelor's of Science (BS) in Aeronautical Engineering, a Bachelor of Arts (BA) in International & Intercultural Studies and a Master of Science degree (MS) in Management and Organizational Development. For over 25 years Takis has managed and directed special projects and has entered successfully into domestic and international contract negotiations. He has helped with the development of multi-million dollar companies, such as Alamo Rent-A-Car, Thrifty Car Rental in San Diego, Superset LTD, The Lirac Corporation and Greka International. For four years he worked closely with the Las Vegas Convention Authority in the fields of domestic marketing and development. He is also responsible for developing five different fast casual food concepts in California, including Santorini Island Grill, Papa C's Fresh Mexican Food, PastaMania Italian Bistro, The Macaroni Bowl, Greek Bites. Back in the late 80's he co-started Greek-To-Go which later became a major Greek restaurant.
Jaime Conde - Executive Vice President, Sales & CFO
Jaime is our company's Chief Financial Officer, Member and original investor of our concept. Over the past 20 years Mr. Conde has held several sales and business management positions with small private and large publicly held multi-national technology companies. His engineering education and business acumen have allowed him to develop a broad business background from start up development to international project management. Most recently he was VP and co-owner of Silicon Technical Sales, Inc., a successful manufacturers sales representative organization.
Dale Harelik - Director of Franchise Sales & Marketing (Domestic & International)
Dale is one of the founding members and managing directors of Hippocrates Management. His chief responsibility is the direct administration of sales, marketing and financial management. In addition, Dale also manages the medical practice business development for HouseCall Doctors. He brings thirteen years of business experience as the former Chief Financial Officer and founding partner of a world-renowned top 50 franchise organization with locations in over 23 countries. He is a graduate of Southern Methodist University where he received his Bachelor of Business Administration degree (BBA) with an emphasis in entrepreneurship and enterprising.
Lucas Orr - Executive Chef, Franchise Operations / Training
Lucas joined our company on January of 2007. He moved to San Diego in 2001 to attend the San Diego Culinary Institute from where he graduated with a GPA of 3.5. While studying towards his certificate, he worked towards his internship in a restaurant located in Vista, California called Savory and shortly after he worked for Siesel’s Old Fashioned Meat Company to satisfy his curiosity about meat variations, portions and different cuts. In 2004 he was hired at Bertrand’s at Mr. A’s, a landmark in San Diego’s culinary scene and at the same time he worked as a part-time Sous-Chef at Carmel Mountain Ranch Country Club. Two years later he was promoted to Executive Chef at the CMR Country Club where he met Santorini’s founder Takis Vartelas who took Lucas to Santorini after the Club was sold to Korean investors.
Juan Prieto - Franchise Operations & Training Manager
Juan started in 1999 as our company's first employee. He has over fifteen (15) years of experience in the food service industry. Most recently, Juan worked as a head cook for San Diego's North County California Pizza Kitchen restaurant.
Eleni Vartelas - Co-Founder & Store Development Director
Eleni was a co-founder of our concept in 1999. In the past, she has worked as Sales Associate for Nordstrom's stores in La Jolla, California, Caesar's Palace in Las Vegas and Royal Maui in San Diego, California. During her time with the above establishments, Eleni was also responsible for merchandising and window display. Prior to this, Eleni worked for close to ten (10) years in Scripps Clinic / La Jolla, California as a statistician.
